Description
Jamie Oliver’s Turkey Crown is a roasting recipe featuring the breast portion of a turkey, seasoned and cooked to perfection with butter, fresh herbs, and spices for a tender and flavorful result.

- 2.5–3kg (5.5-6.5 lbs) turkey crown

- 100g (7 tablespoons) unsalted butter, softened

- 2 garlic cloves, minced

- 1 lemon, zest and juice

- 1 teaspoon smoked paprika (optional)

- 2 sprigs fresh rosemary, finely chopped
-
- 2 sprigs fresh thyme, finely chopped

- Salt and freshly ground black pepper to taste

- 1 onion, halved
-
- 1 carrot, roughly chopped
-
- 1 celery stick, roughly chopped

- 250ml (1 cup) chicken or turkey stock
Instructions
Step 1: Preheat the Oven

- Preheat your oven to 190°C (375°F) or 170°C (325°F) for fan ovens.
Step 2: Prepare the Herb Butter

- In a bowl, mix the softened butter with minced garlic, lemon zest, smoked paprika (if using), rosemary, thyme, salt, and pepper.
Step 3: Prepare the Turkey Crown

- Gently loosen the skin of the turkey crown using your fingers, being careful not to tear it. Spread half of the herb butter under the skin, ensuring even coverage. Rub the remaining butter all over the outside of the turkey.
Step 4: Arrange the Vegetables

- Place the onion, carrot, and celery in the bottom of a roasting tray. Lay the turkey crown on top, breast side up. Pour the lemon juice and chicken stock into the tray.
Step 5: Roast the Turkey Crown

- Cover the turkey crown loosely with foil and roast in the preheated oven.

- For a 2.5-3kg turkey crown, roast for approximately 1 hour 45 minutes to 2 hours. Remove the foil during the last 30 minutes to allow the skin to crisp up.
Step 6: Check the Temperature

- Insert a meat thermometer into the thickest part of the turkey breast. It should read 70°C (160°F) when cooked. Remove from the oven and let it rest for 20 minutes, during which the temperature will rise to 74°C (165°F).
Step 7: Serve and Enjoy

- Slice the turkey crown and serve with your favorite festive sides and gravy made from the pan drippings.
