Description

Jamie Oliver’s Turkey Breast recipe involves roasting a boneless or bone-in turkey breast with a herb butter mixture for a juicy, golden main dish. It’s a versatile recipe suitable for various occasions.

    • 1.52kg (3.3-4.4 lbs) turkey breast (boneless or bone-in)

    • 100g (7 tablespoons) unsalted butter, softened

    • 2 garlic cloves, minced

    • Zest of 1 lemon

    • 1 teaspoon smoked paprika (optional)

    • 2 sprigs fresh rosemary, finely chopped

    • 2 sprigs fresh thyme, finely chopped

    • Salt and freshly ground black pepper to taste

    • 1 onion, halved

    • 1 carrot, roughly chopped

    • 1 celery stick, roughly chopped

    • 250ml (1 cup) chicken or turkey stock


Instructions

Step 1: Preheat the Oven

    • Preheat your oven to 190°C (375°F) or 170°C (325°F) for fan ovens.

Step 2: Prepare the Herb Butter

    • In a small bowl, mix the softened butter with minced garlic, lemon zest, smoked paprika (if using), rosemary, thyme, salt, and pepper.

Step 3: Prepare the Turkey Breast

    • Pat the turkey breast dry with paper towels.

    • Gently loosen the skin with your fingers and spread half of the herb butter under the skin. Rub the remaining butter all over the top of the turkey breast.

Step 4: Arrange the Vegetables

    • Place the onion, carrot, and celery in the bottom of a roasting tray. Set the turkey breast on top, skin side up. Pour the chicken stock into the tray.

Step 5: Roast the Turkey Breast

    • Cover the turkey breast loosely with foil and roast in the preheated oven. For a 1.5-2kg turkey breast, roast for approximately 1 hour 30 minutes to 1 hour 45 minutes.

    • Remove the foil during the last 30 minutes to allow the skin to crisp up.

Step 6: Check the Temperature

    • Insert a meat thermometer into the thickest part of the turkey breast. It should read 70°C (160°F) when cooked. Let the turkey rest for 15-20 minutes, during which the temperature will rise to 74°C (165°F).

Step 7: Serve and Enjoy

    • Slice the turkey breast and serve with your favorite sides. Use the pan drippings to make a flavorful gravy.
