Description

Jamie Oliver’s Tomato Soup is a classic dish made with ripe tomatoes, garlic, onions, and fresh basil, blended into a smooth and creamy consistency. This recipe offers a delicious homemade alternative to canned soup, perfect for any season.


Ingredients

    • 1 tablespoon olive oil

    • 1 onion, finely chopped

    • 2 garlic cloves, minced

    • 1 kg (2.2 lbs) ripe tomatoes, chopped

    • 1 tablespoon tomato paste

    • 500ml (2 cups) vegetable stock

    • 1 teaspoon sugar (optional, to balance acidity)

    • Salt and black pepper, to taste

    • Fresh basil leaves, for garnish


Instructions

Step 1: Sauté the Aromatics

    1. Heat olive oil in a large pot over medium heat.

    1. Add the chopped onion and sauté for 3-4 minutes until softened.

    1. Stir in the minced garlic and cook for another minute until fragrant.

Step 2: Cook the Tomatoes

    1. Add the chopped tomatoes and tomato paste to the pot. Stir well to combine.

    1. Season with salt, black pepper, and sugar (if using). Cook for 10 minutes, stirring occasionally, until the tomatoes soften and release their juices.

Step 3: Add the Stock

    1. Pour in the vegetable stock and bring the mixture to a gentle boil.

    1. Reduce the heat to low and simmer for 10-15 minutes to allow the flavors to meld.

Step 4: Blend the Soup

    1. Remove the pot from heat and let the soup cool slightly.

    1. Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup in batches to a countertop blender.

Step 5: Adjust Seasoning and Serve

    1. Taste the soup and adjust the seasoning with additional salt or pepper if needed.

    1. Ladle the soup into bowls and garnish with fresh basil leaves. Serve warm with your favorite side.
