-
- 1 kg (2.2 lbs) ripe tomatoes, chopped
-
- 1 tablespoon tomato paste
-
- 500ml (2 cups) vegetable stock
-
- 1 teaspoon sugar (optional, to balance acidity)
-
- Salt and black pepper, to taste
-
- Fresh basil leaves, for garnish

Step 1: Sauté the Aromatics
-
- Heat olive oil in a large pot over medium heat.
-
- Add the chopped onion and sauté for 3-4 minutes until softened.

- Stir in the minced garlic and cook for another minute until fragrant.
Step 2: Cook the Tomatoes
-
- Add the chopped tomatoes and tomato paste to the pot. Stir well to combine.
-
- Season with salt, black pepper, and sugar (if using). Cook for 10 minutes, stirring occasionally, until the tomatoes soften and release their juices.
Step 3: Add the Stock
-
- Pour in the vegetable stock and bring the mixture to a gentle boil.
-
- Reduce the heat to low and simmer for 10-15 minutes to allow the flavors to meld.
Step 4: Blend the Soup

- Remove the pot from heat and let the soup cool slightly.
-
- Use an immersion blender to blend the soup until smooth. Alternatively, transfer the soup in batches to a countertop blender.
Step 5: Adjust Seasoning and Serve
-
- Taste the soup and adjust the seasoning with additional salt or pepper if needed.
-
- Ladle the soup into bowls and garnish with fresh basil leaves. Serve warm with your favorite side.
