Jamie Oliver’s Sweet Potato Muffins are a delicious and nutritious treat that combines the natural sweetness of sweet potatoes with warm spices. Perfect for breakfast, a snack, or even dessert, these muffins are moist, flavorful, and easy to make.
Ingredients

- 400g sweet potatoes, peeled and grated

- 2 large eggs

- 200ml milk (or plant-based milk)

- 100ml olive oil

- 200g plain flour

- 100g wholemeal flour

- 1 tablespoon baking powder

- 1 teaspoon ground cinnamon

- 1/2 teaspoon ground nutmeg

- 100g brown sugar

- 50g raisins or chopped nuts (optional)
Instructions
Step 1: Preheat the Oven
Preheat your oven to 180°C (350°F) and line a muffin tray with paper cases.
Step 2: Mix the Wet Ingredients
In a large mixing bowl, whisk together the eggs, milk, and olive oil until well combined. Stir in the grated sweet potatoes until evenly mixed.
Step 3: Combine the Dry Ingredients
In another bowl, mix the plain flour, wholemeal flour, baking powder, cinnamon, nutmeg, and brown sugar.
Step 4: Mix Wet and Dry Ingredients
Gradually fold the dry ingredients into the wet mixture. Stir until just combined—don’t overmix. Add raisins or nuts if desired.
Step 5: Fill the Muffin Cases
Divide the batter evenly among the muffin cases, filling each about two-thirds full.
Step 6: Bake the Muffins
Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Step 7: Cool and Serve
Let the muffins cool in the tray for 5 minutes before transferring to a wire rack to cool completely.
