Jamie Oliver’s Spicy Prawn Soup is a vibrant and aromatic soup made with fresh prawns, spices, and a tangy broth. Inspired by Asian flavors, it’s both comforting and invigorating.

- 300g (10.5 oz) raw prawns, peeled and deveined

- 1 tablespoon olive oil

- 1 onion, finely chopped

- 2 garlic cloves, minced

- 1 red chili, finely chopped (adjust to taste)

- 1 stalk of lemongrass, bruised

- 1 teaspoon ground turmeric

- 1 teaspoon smoked paprika

- 400ml (14 oz) coconut milk

- 500ml (2 cups) fish or vegetable stock

- 1 tablespoon fish sauce

- Juice of 1 lime

- A handful of fresh cilantro, chopped

- Salt and freshly ground black pepper to taste

- 100g (3.5 oz) mushrooms, sliced

- 1 cup spinach or bok choy
Instructions
Step 1: Sauté the Aromatics

- Heat olive oil in a large pot over medium heat. Add the onion, garlic, ginger, and chili, and sauté for 2-3 minutes until softened and fragrant.
Step 2: Add the Spices and Lemongrass

- Stir in the turmeric, smoked paprika, and bruised lemongrass. Cook for 1 minute to release the aromas.
Step 3: Create the Broth

- Pour in the coconut milk, stock, and fish sauce. Bring to a gentle simmer and let it cook for 10 minutes to infuse the flavors.
Step 4: Add the Prawns and Lime Juice

- Add the prawns to the pot and simmer for 3-5 minutes, or until they turn pink and are cooked through. Stir in the lime juice and season with salt and pepper to taste.
Step 5: Garnish and Serve

- Remove the lemongrass stalk. Ladle the soup into bowls, garnish with fresh cilantro, and serve hot.
