Description

Jamie Oliver’s Spicy Prawn Soup is a vibrant and aromatic soup made with fresh prawns, spices, and a tangy broth. Inspired by Asian flavors, it’s both comforting and invigorating.


Ingredients

Scale
    • 300g (10.5 oz) raw prawns, peeled and deveined

    • 1 tablespoon olive oil

    • 1 onion, finely chopped

    • 2 garlic cloves, minced

    • 1 red chili, finely chopped (adjust to taste)

    • 1 tablespoon fresh ginger, grated

    • 1 stalk of lemongrass, bruised

    • 1 teaspoon ground turmeric

    • 1 teaspoon smoked paprika

    • 400ml (14 oz) coconut milk

    • 500ml (2 cups) fish or vegetable stock

    • 1 tablespoon fish sauce

    • Juice of 1 lime

    • A handful of fresh cilantro, chopped

    • Salt and freshly ground black pepper to taste

Optional Add-Ins:

    • 100g (3.5 oz) mushrooms, sliced

    • 1 cup spinach or bok choy


Instructions

Step 1: Sauté the Aromatics

    • Heat olive oil in a large pot over medium heat. Add the onion, garlic, ginger, and chili, and sauté for 2-3 minutes until softened and fragrant.

Step 2: Add the Spices and Lemongrass

    • Stir in the turmeric, smoked paprika, and bruised lemongrass. Cook for 1 minute to release the aromas.

Step 3: Create the Broth

    • Pour in the coconut milk, stock, and fish sauce. Bring to a gentle simmer and let it cook for 10 minutes to infuse the flavors.

Step 4: Add the Prawns and Lime Juice

    • Add the prawns to the pot and simmer for 3-5 minutes, or until they turn pink and are cooked through. Stir in the lime juice and season with salt and pepper to taste.

Step 5: Garnish and Serve

    • Remove the lemongrass stalk. Ladle the soup into bowls, garnish with fresh cilantro, and serve hot.
