For the Plum Filling

    • 500g (1 lb) ripe plums, halved and pitted

    • 50g (1/4 cup) brown sugar

    • 1 teaspoon ground cinnamon

    • 1 teaspoon vanilla extract

    • Juice of half a lemon

For the Crumble Topping

    • 100g (3/4 cup) all-purpose flour

    • 50g (1/4 cup) unsalted butter, cold and cubed

    • 50g (1/4 cup) brown sugar

    • 30g (1/4 cup) oats (optional, for extra crunch)

    • A pinch of salt

Instructions

Step 1: Preheat the Oven

    • Preheat your oven to 180°C (350°F).

Step 2: Prepare the Plum Filling

    • In a baking dish, toss the halved plums with brown sugar, cinnamon, vanilla extract, and lemon juice.

    • Spread the plums evenly in the dish.

Step 3: Make the Crumble Topping

    • In a bowl, mix flour, brown sugar, and a pinch of salt.

    • Add the cold butter and rub it into the flour mixture using your fingertips until it resembles coarse breadcrumbs.

    • Stir in the oats if using.

Step 4: Assemble the Crumble

    • Evenly sprinkle the crumble topping over the plums.

Step 5: Bake the Crumble

    • Place the dish in the oven and bake for 30-35 minutes, or until the topping is golden brown and the plums are bubbling.

Step 6: Serve and Enjoy

    • Let the crumble cool slightly before serving.

    • Serve warm with vanilla ice cream, whipped cream, or custard.
