Jamie Oliver’s Pasta al Limone is a simple yet elegant dish that combines the creamy richness of pasta with the bright, zesty flavors of lemon. This Italian classic is quick to prepare and perfect for a light but satisfying meal.


Ingredients

    • 250g (9 oz) spaghetti or tagliatelle

    • 1 lemon (zest and juice)

    • 50g (1/2 cup) Parmesan cheese, finely grated

    • 2 tablespoons unsalted butter

    • 1 clove garlic, minced (optional)

    • 1/2 cup pasta water

    • 2 tablespoons olive oil

    • Salt and black pepper to taste

    • Fresh basil or parsley for garnish


Instructions

Step 1: Cook the Pasta

    • Bring a large pot of salted water to a boil and cook the pasta until al dente. Reserve 1/2 cup of pasta water before draining.

Step 2: Prepare the Sauce

    • In a large pan over medium heat, melt the butter with olive oil.

    • Add minced garlic (if using) and sauté for 30 seconds until fragrant.

    • Stir in the lemon zest and juice.

Step 3: Combine with Pasta

    • Add the drained pasta to the pan and toss to coat in the lemon mixture.

    • Pour in the reserved pasta water a little at a time, stirring until a glossy sauce forms.

Step 4: Add Parmesan and Season

    • Remove from heat and stir in the grated Parmesan, mixing well to create a creamy consistency.

    • Season with salt and black pepper to taste.

Step 5: Garnish and Serve

    • Sprinkle with fresh basil or parsley and serve immediately.
