Jamie Oliver’s Mascarpone Cheesecake is a luscious cheesecake made with a mascarpone cheese filling and a buttery biscuit base. It can be topped with a variety of garnishes, making it a versatile and delicious dessert.

For the Base:

    • 200g (7 oz) digestive biscuits or graham crackers, crushed

    • 100g (3.5 oz) unsalted butter, melted

For the Filling:

    • 500g (17 oz) mascarpone cheese

    • 200g (7 oz) cream cheese

    • 100g (3.5 oz) icing sugar (confectioner’s sugar)

    • 1 teaspoon vanilla extract

    • Zest and juice of 1 lemon

For the Topping (optional):

    • Fresh berries (strawberries, raspberries, or blueberries)

    • Chocolate shavings or sauce

    • Caramel drizzle


Instructions

Step 1: Prepare the Base

    • Crush the digestive biscuits or graham crackers into fine crumbs. Mix with the melted butter until well combined.

    • Press the mixture firmly into the bottom of a 20cm (8-inch) springform tin. Chill in the fridge for at least 30 minutes to set.

Step 2: Make the Filling

    • In a large mixing bowl, beat the mascarpone cheese, cream cheese, and icing sugar until smooth and creamy.

    • Add the vanilla extract, lemon zest, and juice. Mix until fully incorporated.

Step 3: Assemble the Cheesecake

    • Spoon the mascarpone mixture over the chilled biscuit base, spreading it evenly with a spatula. Smooth the top for a neat finish.

    • Chill in the fridge for at least 4 hours, or ideally overnight, to set.

Step 4: Add the Toppings

    • Before serving, decorate the cheesecake with your chosen toppings, such as fresh berries, chocolate shavings, or caramel drizzle.

Step 5: Slice and Serve

    • Carefully remove the cheesecake from the tin, slice into portions, and serve chilled.
