Jamie Oliver’s Lentils and Salmon is a wholesome dish featuring tender salmon fillets paired with flavorful, seasoned lentils. Cooked with fresh herbs, vegetables, and a hint of acidity, the lentils provide the perfect base for the flaky salmon.

For the Lentils:
- 1 cup dried green or Puy lentils (or 1 can of cooked lentils, rinsed and drained)
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 1 carrot, diced
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- 2 cups vegetable stock or water
- 1 tablespoon red wine vinegar
- Salt and black pepper, to taste
For the Salmon:
- 4 salmon fillets (skin-on or skinless)
- 1 tablespoon olive oil
- Salt and black pepper, to taste
- Lemon wedges, for serving
- Fresh parsley or dill, chopped, for garnish
Instructions
Step 1: Prepare the Lentils

- If using dried lentils, rinse them thoroughly and cook according to package instructions until tender. Drain and set aside.

- Heat olive oil in a large skillet over medium heat. Add the chopped onion and carrot and sauté for 5-6 minutes until softened.

- Add the garlic and thyme, cooking for another minute until fragrant.

- Stir in the cooked lentils (or canned lentils) and pour in the vegetable stock. Simmer for 5-7 minutes to allow the flavors to meld.

- Stir in the red wine vinegar, season with salt and black pepper, and keep warm.
Step 2: Cook the Salmon

- Pat the salmon fillets dry with a paper towel and season both sides with salt and black pepper.

- Heat olive oil in a non-stick skillet over medium-high heat. Place the salmon fillets skin-side down (if applicable) and cook for 4-5 minutes until the skin is crispy.

- Flip the fillets carefully and cook for another 2-3 minutes until the salmon is cooked to your liking (slightly pink in the center for medium).
Step 3: Assemble and Serve

- Spoon the lentils onto plates or a serving platter, creating a bed for the salmon.

- Place the salmon fillets on top of the lentils. Garnish with fresh parsley or dill.

- Serve immediately with lemon wedges on the side for an extra burst of flavor.
