Jamie Oliver’s Bolognese Spaghetti is a classic pasta dish featuring a rich and flavorful meat sauce made with minced beef, vegetables, tomatoes, and Italian herbs, served over spaghetti.

- 400g (14 oz) spaghetti

- 2 tablespoons olive oil

- 1 onion, finely chopped

- 500g (1 lb) minced beef

- 1 teaspoon dried oregano

- 1 teaspoon dried basil

- 2 tablespoons tomato paste

- 400g (14 oz) canned chopped tomatoes

- 500ml (2 cups) beef stock

- 1 bay leaf

- 1 tablespoon balsamic vinegar

- Salt and freshly ground black pepper to taste

- Grated Parmesan cheese, for serving

- Fresh parsley or basil, for garnish

Instructions
Step 1: Cook the Spaghetti

- Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions. Reserve 1/2 cup of pasta water before draining.
Step 2: Sauté the Vegetables

- Heat olive oil in a large skillet or pot over medium heat. Add the onion, carrot, and celery. Sauté for 8-10 minutes until softened. Add the garlic and cook for 1-2 minutes more.
Step 3: Cook the Meat

- Add the minced beef to the skillet. Cook until browned, breaking it up with a wooden spoon as it cooks. Drain any excess fat if needed.
Step 4: Add the Tomatoes and Spices

- Stir in the oregano, basil, and tomato paste. Add the canned tomatoes, beef stock, and bay leaf. Mix well and bring to a simmer.
Step 5: Simmer the Sauce

- Reduce the heat and let the sauce simmer uncovered for 20-25 minutes, stirring occasionally, until thickened. Stir in the balsamic vinegar and season with salt and pepper.
Step 6: Combine and Serve

- Toss the cooked spaghetti with the Bolognese sauce, adding a splash of reserved pasta water if needed to loosen the sauce. Serve hot, topped with grated Parmesan and fresh parsley or basil.
