Description

This Air-Fryer Cauliflower Curry features tender, spiced cauliflower roasted in an air fryer and tossed in a creamy coconut curry sauce. It’s a simple yet delicious meal that is both satisfying and healthy.

For the Air-Fried Cauliflower:

    • 1 medium cauliflower (cut into florets)

    • 2 tablespoons olive oil

    • 1 teaspoon turmeric

    • 1 teaspoon cumin powder

    • 1 teaspoon curry powder

    • ½ teaspoon chili powder (adjust to taste)

    • ½ teaspoon salt

For the Curry Sauce:

    • 1 tablespoon vegetable oil

    • 1 small onion (finely chopped)

    • 2 cloves garlic (minced)

    • 1 teaspoon ginger (grated)

    • 1 teaspoon garam masala

    • 1 teaspoon ground coriander

    • ½ teaspoon chili flakes (optional)

    • 1 can (400ml) coconut milk

    • ½ cup vegetable broth or water

    • 1 teaspoon sugar

    • Salt to taste

    • Juice of ½ lemon

    • Fresh coriander (for garnish)


Instructions

Step 1: Preheat the Air Fryer and Season the Cauliflower

    • Preheat your air fryer to 200°C (400°F) for a few minutes.

    • In a bowl, toss the cauliflower florets with olive oil, turmeric, cumin, curry powder, chili powder, and salt until evenly coated.

Step 2: Air-Fry the Cauliflower

    • Place the seasoned cauliflower in the air fryer basket in a single layer.

    • Cook for 12-15 minutes, shaking the basket halfway through, until golden brown and crispy.

Step 3: Prepare the Curry Sauce

    • Heat 1 tablespoon of oil in a pan over medium heat.

    • Add onion, garlic, and ginger and sauté until soft and fragrant.

    • Stir in garam masala, coriander, and chili flakes, cooking for another minute.

    • Pour in coconut milk, vegetable broth, and sugar, stirring well.

    • Simmer for 5 minutes, allowing the flavors to meld together.

Step 4: Combine and Finish

    • Add the air-fried cauliflower to the curry sauce, tossing gently to coat.

    • Squeeze in lemon juice and adjust seasoning as needed.

    • Simmer for 2 minutes, then remove from heat.

Step 5: Serve and Enjoy

    • Garnish with fresh coriander and serve hot with steamed rice, naan, or flatbread.
