Jamie Oliver’s Griddle Pan Waffles are a creative twist on classic waffles, made using a griddle pan instead of a traditional waffle iron. They’re light, crispy, and perfect for any breakfast or brunch spread.

Instructions
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, beat the egg and mix in the milk, melted butter, and vanilla extract (if using). Pour the wet ingredients into the dry ingredients and gently mix until just combined. Avoid overmixing; a few lumps are fine.
Place your griddle pan over medium heat and allow it to heat up for a few minutes. Lightly brush the pan with melted butter to prevent sticking.
Pour a ladleful of batter onto the preheated griddle pan. Use a spatula or spoon to spread the batter slightly to create an even layer. Cook for 2-3 minutes until bubbles start to form on the surface and the bottom is golden brown.
Carefully flip the waffle using a spatula and cook the other side for an additional 2-3 minutes until both sides are golden and crisp. Repeat with the remaining batter, greasing the pan between waffles as needed.
Serve the waffles warm with your choice of toppings. Enjoy!
