Jamie Oliver’s Fig Jam is a homemade fruit preserve made from fresh figs, sugar, and lemon juice. This simple jam recipe highlights the natural sweetness of figs and is perfect for spreading on toast, serving with cheese, or using in baked goods.
Ingredients

- 2 lbs fresh figs, stems removed and chopped

- 1 1/2 cups granulated sugar

- Juice and zest of 1 lemon

Instructions
Wash the figs, remove the stems, and chop them into small pieces. Place them in a large saucepan.
Add the sugar, lemon juice, lemon zest, and water to the saucepan with the figs. Stir to combine and let it sit for 10-15 minutes, allowing the sugar to start dissolving and the figs to release some juice.
Place the saucepan over medium heat and bring the mixture to a boil, stirring frequently. Once it reaches a boil, reduce the heat to low and let it simmer. Continue to cook for 30-40 minutes, stirring occasionally, until the mixture thickens and the figs break down.
To check if the jam is ready, place a small spoonful on a cold plate and let it cool for a few seconds. If it thickens and holds its shape, the jam is done. If not, continue cooking for a few more minutes and test again.
Once the jam reaches your desired consistency, remove it from the heat and let it cool slightly. Pour the jam into sterilized jars, seal, and let it cool completely before storing in the refrigerator.
