Instructions

Step 1: Prepare the Ramekins

  • Preheat your oven to 200°C (400°F).
  • Generously grease 4 ramekins with butter and dust with cocoa powder, tapping out the excess. This ensures the fondants release easily after baking.

Step 2: Melt the Chocolate and Butter

  • Place the chopped chocolate and butter in a heatproof bowl. Melt them together over a saucepan of simmering water, stirring occasionally until smooth. Remove from heat and let cool slightly.

Step 3: Whisk the Eggs and Sugar

  • In a separate bowl, whisk the eggs, egg yolks, and caster sugar until pale and fluffy. This step helps incorporate air for a light texture.

Step 4: Combine the Mixtures

  • Gradually pour the melted chocolate mixture into the egg mixture, gently folding with a spatula. Add the sifted flour and salt, and fold until just combined.
