Jamie Oliver’s Chocolate Fondant is a luxurious dessert where a rich chocolate batter is baked until just set on the outside, leaving a gooey, molten center that oozes out when cut.

- 100g (3.5 oz) dark chocolate (70% cocoa), chopped
- 100g (3.5 oz) unsalted butter, plus extra for greasing
- 2 eggs
- 2 egg yolks
- 75g (2.6 oz) caster sugar
- 50g (1.8 oz) plain flour, sifted
- Cocoa powder for dusting
- A pinch of salt
Optional Add-Ins:
- 1 teaspoon orange zest for a citrusy flavor
- 1 teaspoon instant coffee for a mocha twist
Instructions
Step 1: Prepare the Ramekins
- Preheat your oven to 200°C (400°F).
- Generously grease 4 ramekins with butter and dust with cocoa powder, tapping out the excess. This ensures the fondants release easily after baking.
Step 2: Melt the Chocolate and Butter
- Place the chopped chocolate and butter in a heatproof bowl. Melt them together over a saucepan of simmering water, stirring occasionally until smooth. Remove from heat and let cool slightly.
Step 3: Whisk the Eggs and Sugar
- In a separate bowl, whisk the eggs, egg yolks, and caster sugar until pale and fluffy. This step helps incorporate air for a light texture.
Step 4: Combine the Mixtures
- Gradually pour the melted chocolate mixture into the egg mixture, gently folding with a spatula. Add the sifted flour and salt, and fold until just combined.
Step 5: Fill the Ramekins
- Divide the batter evenly among the prepared ramekins, filling them about three-quarters full.
Step 6: Bake the Fondants
- Place the ramekins on a baking tray and bake for 10-12 minutes. The edges should be set while the center remains soft and molten.
Step 7: Serve Immediately
- Let the fondants cool for 1 minute, then gently run a knife around the edges. Turn them out onto plates and serve warm, optionally dusted with icing sugar and paired with ice cream or berries.
