Description

Jamie Oliver’s Chicken Mushroom Parcels is a recipe where chicken breasts are paired with a creamy mushroom filling, then wrapped in puff pastry and baked until golden. The flavors blend beautifully as the chicken stays moist within the pastry, and the mushrooms add a rich, earthy taste.

  • 4 chicken breasts, boneless and skinless
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 200g (7 oz) mushrooms, finely chopped
  • 1 clove garlic, minced
  • 1/2 cup heavy cream (or crème fraîche)
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 package puff pastry sheets, thawed
  • 1 egg, beaten, for egg wash
  • Fresh parsley, chopped, for garnish

Instructions

Step 1: Preheat the Oven

Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.

Step 2: Sear the Chicken

Season the chicken breasts with salt and black pepper. In a skillet over medium heat, heat the olive oil and sear the chicken breasts for about 2-3 minutes per side until they are lightly browned. Remove from the skillet and set aside to cool slightly.

Step 3: Prepare the Mushroom Filling

In the same skillet, add the chopped mushrooms and cook for 4-5 minutes until softened. Add the garlic and thyme, cooking for another minute until fragrant. Stir in the heavy cream, reduce the heat, and let the mixture simmer for 2-3 minutes until thickened. Season with salt and pepper to taste. Remove from heat and allow to cool slightly.

Step 4: Assemble the Parcels

On a floured surface, roll out the puff pastry sheets if necessary. Cut each sheet into squares large enough to wrap around each chicken breast. Place a spoonful of the mushroom mixture in the center of each square, then place a chicken breast on top. Fold the pastry over the chicken, sealing the edges by pressing them together. Brush the tops with the beaten egg for a golden finish.

Step 5: Bake the Parcels

Place the parcels on the prepared baking sheet, seam side down. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed.

Step 6: Serve

Allow the parcels to cool for a few minutes before serving. Garnish with freshly chopped parsley and serve warm with your favorite side dishes.
