Jamie Oliver’s Cheese Toastie is a simple yet delicious grilled sandwich made with crispy bread and melted cheese, with optional add-ins for extra flavor.

- 2 slices of bread (sourdough or white bread work best)
- 50g (2 oz) grated mature cheddar cheese
- 25g (1 oz) grated mozzarella (optional for extra gooeyness)
- 1 tablespoon butter, softened
- 1 teaspoon Dijon mustard (optional)
- A pinch of salt and freshly ground black pepper
Optional Add-Ins:
- Sliced tomato for a fresh twist
- Cooked ham or bacon for a meaty addition
- A sprinkle of chili flakes for heat
Instructions
Step 1: Prepare the Ingredients
- Spread butter evenly on one side of each bread slice. If using, spread Dijon mustard on the other side.
Step 2: Assemble the Sandwich
- Place one slice of bread, butter-side down, on a cutting board. Top with grated cheddar, mozzarella (if using), and a pinch of salt and pepper. Place the second slice of bread on top, butter-side up.
Step 3: Toast the Sandwich
- Heat a non-stick skillet or griddle pan over medium heat. Place the sandwich in the pan and cook for 2-3 minutes on one side, pressing down lightly with a spatula.
Step 4: Flip and Finish Cooking
- Carefully flip the sandwich and cook for another 2-3 minutes until both sides are golden brown and the cheese is fully melted.
Step 5: Slice and Serve
- Remove the toastie from the pan, let it cool slightly, then slice it in half. Serve immediately while the cheese is gooey and hot.
