Jamie Oliver’s Cauliflower Macaroni Cheese combines tender macaroni pasta, steamed cauliflower, and a rich, creamy cheese sauce. The cauliflower adds a unique depth of flavor and texture, making this a healthier twist on the traditional macaroni cheese recipe.
Ingredients
- 300g macaroni
- 1 medium cauliflower, broken into small florets
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 2 cups milk
- 1 cup grated cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon Dijon mustard
- Salt and black pepper, to taste
- 1/2 cup breadcrumbs (optional, for topping)
- 2 tablespoons butter (optional, for topping)
Instructions
Bring a large pot of salted water to a boil. Add the macaroni and cook according to the package instructions. Add the cauliflower florets to the pot during the last 5 minutes of cooking. Drain and set aside.
In a large saucepan, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant. Stir in the flour and cook for another minute to form a roux. Gradually whisk in the milk, ensuring there are no lumps. Cook for 4-5 minutes, stirring constantly, until the sauce thickens.
Remove the sauce from heat and stir in the grated cheddar, Parmesan, and Dijon mustard. Season with salt and black pepper to taste. Mix until the cheese is fully melted and the sauce is smooth.
Return the drained macaroni and cauliflower to the pot. Pour the cheese sauce over them and stir until everything is evenly coated.
Preheat your oven to 200°C (400°F). If desired, transfer the macaroni and cauliflower mixture to a baking dish. Combine breadcrumbs and melted butter, then sprinkle over the top. Bake for 10-15 minutes, or until golden and bubbling.
Serve the cauliflower macaroni cheese warm, garnished with additional Parmesan or fresh parsley if desired.
