Jamie Oliver Panettone bread and butter pudding is a twist on traditional bread and butter pudding, using slices of panettone instead of regular bread. The panettone absorbs a creamy custard mixture, creating a rich, sweet dessert with a delicate, fluffy texture.

- 500g panettone, sliced

- 50g unsalted butter, softened

- 3 large eggs

- 400ml whole milk

- 200ml double cream

- 75g caster sugar

- 1 teaspoon vanilla extract

- Zest of 1 orange (optional, for a festive touch)

- A handful of raisins or chocolate chips (optional)

- Icing sugar, for dusting
Instructions
1. Preheat the Oven

- Preheat your oven to 180°C (350°F). Grease a baking dish with a little butter.
2. Prepare the Panettone

- Spread a thin layer of softened butter on each slice of panettone. Cut the buttered slices into halves or quarters and arrange them in the baking dish, slightly overlapping each piece. If using raisins or chocolate chips, scatter them between the layers.
3. Make the Custard

- In a mixing bowl, whisk together the eggs, caster sugar, milk, double cream, vanilla extract, and orange zest (if using). Whisk until smooth and well combined.
4. Pour Over the Custard

- Carefully pour the custard mixture over the panettone slices, making sure to coat each piece. Let it sit for about 10-15 minutes to allow the panettone to absorb the custard.
5. Bake the Pudding

- Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the pudding is set and golden brown on top. The custard should be slightly puffed and just set, but still soft.
6. Serve

- Remove from the oven and let cool slightly. Dust with icing sugar and serve warm. Enjoy on its own or with a scoop of vanilla ice cream or a dollop of whipped cream.
