- 500g Brussels sprouts (trimmed and halved)
- 100g pancetta (cubed)

Instructions
Trim the ends of the Brussels sprouts and slice them in half. Set them aside while you prepare the rest of the ingredients.
Heat the olive oil in a large pan over medium heat. Add the pancetta and cook for about 3-4 minutes until it becomes crispy and golden. Stir occasionally to ensure even cooking.
Add the sliced garlic to the pan and cook for 1 minute until fragrant, being careful not to burn it. Next, add the halved Brussels sprouts, placing them cut side down in the pan. Cook for 5-7 minutes, without stirring too much, to allow the Brussels sprouts to develop a golden, crispy texture on the cut side.
Once the Brussels sprouts are golden and tender, remove the pan from heat. Add the lemon zest and squeeze the lemon juice over the Brussels sprouts, stirring everything together. The lemon adds a fresh, tangy flavor that brightens up the dish.
Transfer the Brussels sprouts and pancetta mixture to a serving dish. Serve hot as a flavorful side dish for any main meal.
