Description

Jamie Oliver’s Zucchini Salad is a raw vegetable salad made with thinly sliced zucchini (or courgette), fresh herbs, a lemony dressing, and Parmesan cheese. It’s simple, light, and perfect for bringing out the natural flavors of fresh zucchini.

  • 2 medium zucchinis (courgettes)
  • 1 lemon (zested and juiced)
  • 2 tablespoons extra-virgin olive oil
  • Salt and pepper to taste
  • A handful of fresh mint or basil leaves, torn
  • Parmesan cheese, shaved (optional)
  • Crushed red pepper flakes (optional, for a bit of heat)

Instructions

Step 1: Prepare the Zucchini

Wash the zucchini thoroughly. Using a vegetable peeler or mandoline, slice the zucchini into thin ribbons. Alternatively, you can slice them into thin rounds if you prefer.

Step 2: Make the Dressing

In a small bowl, whisk together the lemon juice, lemon zest, extra-virgin olive oil, salt, and pepper. Taste and adjust the seasoning if needed.

Step 3: Toss the Salad

In a large bowl, combine the zucchini ribbons with the torn mint or basil leaves. Drizzle the lemon dressing over the salad and gently toss to coat the zucchini evenly.

Step 4: Add Parmesan and Serve

Arrange the zucchini salad on a serving plate. Top with shaved Parmesan cheese and sprinkle with crushed red pepper flakes, if desired. Serve immediately for the freshest flavor.
