    • 250g (1 cup) unsalted butter, softened

    • 50g (1 cup) wild garlic leaves, finely chopped

    • Zest of 1 lemon

    • 1 teaspoon salt

    • 1/2 teaspoon black pepper

    • 1/2 teaspoon chili flakes (optional)


Instructions

Step 1: Prepare the Ingredients

    • Wash the wild garlic leaves thoroughly and pat them dry.

    • Finely chop the wild garlic leaves to help them blend well into the butter.

Step 2: Mix the Butter and Garlic

    • In a bowl, mash the softened butter with a fork until smooth.

    • Add the chopped wild garlic, lemon zest, salt, black pepper, and chili flakes if using.

Step 3: Combine and Shape

    • Mix everything thoroughly until the wild garlic is evenly distributed throughout the butter.

    • Spoon the butter onto a piece of parchment paper and shape it into a log.
