Jamie Oliver’s Vanilla Cheesecake is a rich and creamy dessert with a buttery biscuit base and a smooth vanilla-infused filling. This no-fuss recipe is perfect for any occasion, whether it’s a family gathering or a weekend treat.

For the Biscuit Base:

    • 250g (2 cups) digestive biscuits, crushed

    • 100g (½ cup) unsalted butter, melted

    • 2 tbsp sugar

For the Vanilla Cheesecake Filling:

    • 500g (2 cups) cream cheese, softened

    • 200ml (¾ cup) double cream

    • 100g (½ cup) powdered sugar

    • 1 tsp vanilla extract

    • 2 tbsp lemon juice

For the Topping (Optional):

    • Fresh berries

    • Caramel sauce

    • Chocolate shavings


Instructions

Step 1: Prepare the Biscuit Base

    • Crush the digestive biscuits into fine crumbs.

    • Mix with melted butter and sugar until well combined.

    • Press the mixture firmly into the base of a 20cm (8-inch) springform pan.

    • Chill in the fridge for 30 minutes to set.

Step 2: Make the Cheesecake Filling

    • In a large bowl, beat the cream cheese until smooth.

    • Add powdered sugar, vanilla extract, and lemon juice, mixing well.

    • Whip the double cream separately until soft peaks form, then fold into the cream cheese mixture.

Step 3: Assemble and Chill

    • Pour the filling over the biscuit base and smooth the top.

    • Cover and refrigerate for at least 4 hours, preferably overnight.

Step 4: Add Toppings and Serve

    • Before serving, top with fresh berries, caramel, or chocolate shavings.

    • Slice and enjoy!
