For the Biscuit Base:

- 250g (2 cups) digestive biscuits, crushed

- 100g (½ cup) unsalted butter, melted

- 2 tbsp sugar
For the Vanilla Cheesecake Filling:

- 500g (2 cups) cream cheese, softened

- 200ml (¾ cup) double cream

- 100g (½ cup) powdered sugar

- 1 tsp vanilla extract

- 2 tbsp lemon juice
For the Topping (Optional):

- Caramel sauce

- Chocolate shavings
Instructions
Step 1: Prepare the Biscuit Base

- Crush the digestive biscuits into fine crumbs.

- Mix with melted butter and sugar until well combined.

- Press the mixture firmly into the base of a 20cm (8-inch) springform pan.

- Chill in the fridge for 30 minutes to set.
Step 2: Make the Cheesecake Filling

- In a large bowl, beat the cream cheese until smooth.

- Add powdered sugar, vanilla extract, and lemon juice, mixing well.

- Whip the double cream separately until soft peaks form, then fold into the cream cheese mixture.
Step 3: Assemble and Chill

- Pour the filling over the biscuit base and smooth the top.

- Cover and refrigerate for at least 4 hours, preferably overnight.
Step 4: Add Toppings and Serve

- Before serving, top with fresh berries, caramel, or chocolate shavings.
