- 100g (3.5 oz) frozen peas (optional)

Optional Add-Ins:

- 1 can (400g) white beans or chickpeas

Instructions
Step 1: Sauté the Aromatics
- 
- Heat olive oil in a large pot over medium heat.

- Add the onion, garlic, carrots, and celery. Sauté for 5-7 minutes until softened and fragrant.
 
 
Step 2: Add the Potatoes and Stock
- 
- Stir in the cubed potatoes and pour in the chicken or turkey stock. Add the thyme and bay leaf. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes until the potatoes are tender.
 
 
Step 3: Add the turkey
- 
- Stir in the shredded turkey and frozen peas (if using). Simmer for another 5-7 minutes until the turkey is warmed through.
 
 
Step 4: Season and Finish
- 
- Remove the bay leaf and thyme sprigs. Season the stew with salt and freshly ground black pepper to taste.
 
 
Step 5: Serve and Garnish

- Ladle the stew into bowls and garnish with freshly chopped parsley. Serve hot with crusty bread or crackers.
