Description

Jamie Oliver’s Turkey Soup is a light yet hearty dish that combines leftover turkey, fresh vegetables, and fragrant herbs in a rich broth. It’s easy to prepare and perfect for a warming meal.


Ingredients

Scale
    • 2 tablespoons olive oil

    • 1 onion, finely chopped

    • 2 garlic cloves, minced

    • 2 carrots, diced

    • 2 celery sticks, sliced

    • 200g (7 oz) potatoes, peeled and cubed

    • 300g (10 oz) leftover turkey, shredded

    • 1.2 liters (5 cups) turkey or chicken stock

    • 1 bay leaf

    • 1 teaspoon dried thyme or a few sprigs of fresh thyme

    • Salt and freshly ground black pepper to taste

    • Fresh parsley or coriander, chopped (for garnish)

    • Juice of half a lemon (optional)

Optional Add-Ins:

    • 100g (3.5 oz) cooked rice or pasta

    • 100g (3.5 oz) frozen peas or sweetcorn


Instructions

Step 1: Sauté the Vegetables

    • Heat olive oil in a large pot over medium heat. Add the chopped onion, garlic, carrots, and celery. Sauté for 5-7 minutes until softened and fragrant.

Step 2: Add the Potatoes and Stock

    • Stir in the cubed potatoes and pour in the turkey or chicken stock. Add the bay leaf and thyme. Bring the soup to a boil, then reduce the heat and let it simmer for 15-20 minutes until the potatoes are tender.

Step 3: Add the turkey

    • Stir in the shredded turkey and simmer for another 5-7 minutes until the turkey is warmed through.

Step 4: Season and Finish

    • Remove the bay leaf and thyme sprigs (if using fresh thyme). Season the soup with salt, black pepper, and a squeeze of lemon juice for added brightness.

Step 5: Serve and Garnish

    • Ladle the soup into bowls and garnish with fresh parsley or coriander. Serve hot with crusty bread or crackers.
