Jamie Oliver’s Turkey Soup is a light yet hearty dish that combines leftover turkey, fresh vegetables, and fragrant herbs in a rich broth. It’s easy to prepare and perfect for a warming meal.

- 2 tablespoons olive oil

- 1 onion, finely chopped

- 2 garlic cloves, minced

- 2 carrots, diced

- 2 celery sticks, sliced

- 200g (7 oz) potatoes, peeled and cubed

- 300g (10 oz) leftover turkey, shredded

- 1.2 liters (5 cups) turkey or chicken stock

- 1 bay leaf

- 1 teaspoon dried thyme or a few sprigs of fresh thyme

- Salt and freshly ground black pepper to taste

- Fresh parsley or coriander, chopped (for garnish)

- Juice of half a lemon (optional)
Optional Add-Ins:

- 100g (3.5 oz) cooked rice or pasta

- 100g (3.5 oz) frozen peas or sweetcorn
Instructions
Step 1: Sauté the Vegetables

- Heat olive oil in a large pot over medium heat. Add the chopped onion, garlic, carrots, and celery. Sauté for 5-7 minutes until softened and fragrant.
Step 2: Add the Potatoes and Stock

- Stir in the cubed potatoes and pour in the turkey or chicken stock. Add the bay leaf and thyme. Bring the soup to a boil, then reduce the heat and let it simmer for 15-20 minutes until the potatoes are tender.
Step 3: Add the turkey

- Stir in the shredded turkey and simmer for another 5-7 minutes until the turkey is warmed through.
Step 4: Season and Finish

- Remove the bay leaf and thyme sprigs (if using fresh thyme). Season the soup with salt, black pepper, and a squeeze of lemon juice for added brightness.
Step 5: Serve and Garnish

- Ladle the soup into bowls and garnish with fresh parsley or coriander. Serve hot with crusty bread or crackers.
