Description

Jamie Oliver’s Turkey Pie is a classic comfort dish featuring tender turkey in a creamy sauce with vegetables, all encased in a buttery puff pastry crust. It’s a versatile and delicious recipe that’s perfect for the whole family.


Ingredients

    • 500g (1 lb) cooked turkey, shredded or chopped

    • 2 tablespoons olive oil

    • 1 onion, finely chopped

    • 2 garlic cloves, minced

    • 2 medium carrots, diced

    • 200g (7 oz) mushrooms, sliced

    • 200ml (¾ cup) chicken or turkey stock

    • 200ml (¾ cup) double cream

    • 2 tablespoons plain flour

    • 1 teaspoon Dijon mustard

    • 1 teaspoon fresh thyme leaves

    • Salt and freshly ground black pepper to taste

    • 1 sheet of ready-made puff pastry

    • 1 egg, beaten (for egg wash)


Instructions

Step 1: Prepare the Filling

    • Heat olive oil in a large skillet over medium heat.

    • Sauté the onion and garlic for 2-3 minutes until softened.

    • Add the carrots and mushrooms, cooking for 5-7 minutes until they begin to soften.

Step 2: Add the turkey

    • Stir in the shredded turkey and cook for another 2 minutes.

Step 3: Make the Sauce

    • Sprinkle the plain flour over the mixture and stir well to coat.

    • Gradually pour in the stock, stirring constantly to create a smooth sauce.

    • Add the double cream, Dijon mustard, and thyme, mixing until fully combined.

    • Season with salt and pepper to taste, then simmer for 5 minutes until thickened.

Step 4: Assemble the Pie

    • Preheat your oven to 200°C (400°F) or 180°C (350°F) for fan ovens.

    • Transfer the filling to a baking dish and allow it to cool slightly.

    • Roll out the puff pastry and place it over the filling, trimming any excess.

    • Press the edges to seal and crimp with a fork for decoration.

    • Brush the pastry with beaten egg for a golden finish.

Step 5: Bake the Pie

    • Bake in the preheated oven for 25-30 minutes, or until the pastry is golden and crisp.
