Description

Jamie Oliver’s Turkey Gravy is a classic sauce made from the drippings of a roasted turkey, combined with flour, stock, and flavorful vegetables. This gravy is smooth, rich, and pairs beautifully with turkey, mashed potatoes, and other holiday sides.

    • Turkey drippings from the roasting pan

    • 2 tablespoons plain flour

    • 1 onion, roughly chopped

    • 1 carrot, roughly chopped

    • 1 stick celery, roughly chopped

    • 1 sprig of fresh rosemary

    • 1 sprig of fresh thyme

    • 500ml (2 cups) turkey or chicken stock

    • Salt and freshly ground black pepper to taste


Instructions

Step 1: Collect the Drippings

    • After roasting the turkey, pour the drippings from the roasting pan into a bowl. Allow it to sit so the fat separates from the juices. Skim off most of the fat, leaving a few tablespoons for flavor.

Step 2: Prepare the Vegetables

    • Place the roasting pan on the stovetop over medium heat. Add the chopped onion, carrot, and celery to the pan, using a wooden spoon to scrape up any browned bits.

Step 3: Create the Base

    • Sprinkle the plain flour over the vegetables and stir to coat evenly. Cook for 2-3 minutes until the flour turns golden brown.

Step 4: Add the Stock

    • Gradually pour in the stock while stirring continuously to avoid lumps. Add the turkey juices (without the fat) to enhance the flavor.

Step 5: Simmer the Gravy

    • Add the rosemary and thyme sprigs to the pan. Let the mixture simmer for 10-15 minutes, stirring occasionally, until it thickens and the flavors meld together.

Step 6: Strain the Gravy

    • Strain the gravy through a fine-mesh sieve into a saucepan or serving jug, discarding the vegetables and herbs.

Step 7: Adjust Seasoning

    • Taste the gravy and season with salt and pepper as needed.

Step 8: Serve and Enjoy

    • Serve the turkey gravy warm alongside your roasted turkey and other holiday sides.
