Description

Jamie Oliver’s Turkey Chowder is a hearty, creamy soup that’s perfect for using up leftover turkey. Packed with vegetables, sweetcorn, and a rich broth, this dish is a comforting bowl of warmth ideal for cooler days or a quick family dinner.


Ingredients

    • 2 tablespoons olive oil or butter

    • 1 onion, finely chopped

    • 2 celery stalks, diced

    • 2 carrots, diced

    • 2 medium potatoes, peeled and cubed

    • 2 cups cooked turkey, shredded

    • 1 cup sweetcorn (frozen or canned, drained)

    • 1 liter (4 cups) chicken or turkey stock

    • 1 cup milk or cream

    • 2 tablespoons plain flour

    • 1 teaspoon fresh thyme or parsley, chopped

    • Salt and freshly ground black pepper to taste

Optional Garnish:

    • Chopped fresh parsley or chives

    • A drizzle of olive oil or cream


Instructions

Step 1: Sauté the Vegetables

    • Heat the olive oil or butter in a large pot over medium heat.

    • Add the onion, celery, and carrots. Sauté for 5-7 minutes until softened.

Step 2: Add the Potatoes and Flour

    • Stir in the cubed potatoes and cook for 2 minutes. Sprinkle the flour over the vegetables and stir well to coat.

Step 3: Pour in the Stock

    • Gradually add the chicken or turkey stock while stirring to avoid lumps. Bring to a simmer and cook for 10-15 minutes, or until the potatoes are tender.

Step 4: Add the Turkey and Sweetcorn

    • Stir in the shredded turkey and sweetcorn. Simmer for another 5 minutes to heat through.

Step 5: Finish with Milk or Cream

    • Reduce the heat to low and stir in the milk or cream. Cook for 2-3 minutes without boiling. Season with salt, black pepper, and fresh thyme or parsley.

Step 6: Serve and Garnish

    • Ladle the chowder into bowls and garnish with fresh parsley, or a drizzle of cream if desired. Serve hot with crusty bread.
