Instructions
Step 1: Sauté the Aromatics
- Heat olive oil in a large pot over medium heat. Add the onion, garlic, and red bell pepper. Sauté for 5-7 minutes until softened and fragrant.
Step 2: Brown the Turkey
- Add the ground turkey to the pot and cook for 5-7 minutes, breaking it up with a wooden spoon, until browned and cooked through.
Step 3: Add the Spices
- Stir in the cumin, smoked paprika, chili powder, and oregano. Cook for 1-2 minutes to toast the spices and release their aroma.
Step 4: Simmer the Chili
- Add the canned tomatoes, kidney beans, chicken or vegetable stock, and tomato paste. Stir well to combine. Bring the mixture to a boil, then reduce the heat to low and simmer uncovered for 20-25 minutes, stirring occasionally.
Step 5: Adjust Seasoning
- Taste and adjust the seasoning with salt, black pepper, and lime juice if desired.
Step 6: Serve and Garnish
- Ladle the chili into bowls and top with your favorite garnishes like coriander, avocado, cheddar cheese, sour cream, or tortilla chips. Serve hot.
