Description

Jamie Oliver’s Sweet Potato Soup is a creamy, comforting dish made by simmering sweet potatoes with onions, garlic, spices, and vegetable stock, then blending it to a silky texture. Finished with a touch of cream or coconut milk, it’s both flavorful and satisfying.


Ingredients

    • 1 tablespoon olive oil

    • 1 onion, finely chopped

    • 2 garlic cloves, minced

    • 1 teaspoon ground cumin

    • 1/2 teaspoon smoked paprika

    • 800g (1.75 lbs) sweet potatoes, peeled and cubed

    • 1 carrot, diced

    • 1 liter (4 cups) vegetable stock

    • 200ml (3/4 cup) coconut milk or heavy cream

    • Salt and black pepper, to taste

    • Fresh coriander or parsley, for garnish


Instructions

Step 1: Sauté the Aromatics
Heat olive oil in a large pot over medium heat. Add the onion and sauté for 3-4 minutes until softened. Stir in the garlic, cumin, and smoked paprika, cooking for 1 minute until fragrant.

Step 2: Cook the Vegetables
Add the sweet potatoes and carrot, stirring to coat them in the spices. Pour in the vegetable stock and bring to a boil. Reduce the heat to low, cover, and simmer for 20-25 minutes until the vegetables are tender.

Step 3: Blend the Soup
Remove the pot from heat and let it cool slightly. Use an immersion blender to puree the soup until smooth, or blend in batches in a countertop blender.

Step 4: Add Coconut Milk or Cream
Return the soup to low heat and stir in the coconut milk or cream. Taste and adjust seasoning with salt and black pepper.

Step 5: Serve and Enjoy
Ladle the soup into bowls, garnish with fresh coriander or parsley, and serve warm.
