- 2 large sweet potatoes, peeled and diced

- 1/2 tsp chili flakes (optional)

- 400g canned chopped tomatoes

- 400ml coconut milk

- 500ml vegetable stock

- 3 tbsp peanut butter

- 1 tbsp olive oil

- 100g spinach or kale

- Salt and black pepper to taste

- Chopped peanuts and fresh coriander for garnish
Instructions
Step 1: Sauté the Aromatics

- Heat olive oil in a large pot over medium heat.

- Add the chopped onion and cook until soft.

- Stir in garlic, bell pepper, cumin, coriander, smoked paprika, and chili flakes.
Step 2: Add the Sweet Potatoes and Liquids

- Add the diced sweet potatoes and mix well.

- Pour in the chopped tomatoes, coconut milk, and vegetable stock.

- Stir in the peanut butter until well combined.
Step 3: Simmer the Stew

- Bring the mixture to a boil, then reduce the heat and let it simmer for 25-30 minutes.

- Stir occasionally until the sweet potatoes are tender.
Step 4: Add the Greens and Adjust Seasoning
