Description

Jamie Oliver’s Sweet Potato and Peanut Stew is a vibrant, plant-based dish made with tender sweet potatoes, tomatoes, peanut butter, and warming spices. This stew is creamy, slightly sweet, and packed with flavor.


Ingredients

    • 2 large sweet potatoes, peeled and diced

    • 1 onion, chopped

    • 2 cloves garlic, minced

    • 1 red bell pepper, diced

    • 1 tsp ground cumin

    • 1 tsp ground coriander

    • 1/2 tsp smoked paprika

    • 1/2 tsp chili flakes (optional)

    • 400g canned chopped tomatoes

    • 400ml coconut milk

    • 500ml vegetable stock

    • 3 tbsp peanut butter

    • 1 tbsp olive oil

    • 100g spinach or kale

    • Salt and black pepper to taste

    • Chopped peanuts and fresh coriander for garnish


Instructions

Step 1: Sauté the Aromatics

    • Heat olive oil in a large pot over medium heat.

    • Add the chopped onion and cook until soft.

    • Stir in garlic, bell pepper, cumin, coriander, smoked paprika, and chili flakes.

Step 2: Add the Sweet Potatoes and Liquids

    • Add the diced sweet potatoes and mix well.

    • Pour in the chopped tomatoes, coconut milk, and vegetable stock.

    • Stir in the peanut butter until well combined.

Step 3: Simmer the Stew

    • Bring the mixture to a boil, then reduce the heat and let it simmer for 25-30 minutes.

    • Stir occasionally until the sweet potatoes are tender.

Step 4: Add the Greens and Adjust Seasoning

    • Stir in the spinach or kale and let it wilt for a few minutes.

    • Season with salt and black pepper to taste.

Step 5: Serve and Garnish

    • Ladle the stew into bowls and garnish with chopped peanuts and fresh coriander.

    • Serve with rice or crusty bread.
