Instructions
Peel and chop the swede and carrots into even-sized chunks. This ensures that they cook evenly and soften at the same rate.
Place the chopped swede and carrots into a large pot and cover them with cold water. Add a pinch of salt, then bring the water to a boil. Reduce the heat and simmer for about 20-25 minutes, or until the vegetables are tender when pierced with a fork.
Once the swede and carrots are cooked through, drain them well in a colander and return them to the pot. Let them steam dry for a minute to remove any excess water, which helps achieve a smoother mash.
Add the unsalted butter to the pot with the drained vegetables. Use a potato masher to mash the swede and carrots until smooth. If you prefer a creamier consistency, add a splash of milk or cream and continue mashing until you reach your desired texture.
Season the mash with salt and pepper to taste. For an extra burst of flavor, stir in the fresh thyme leaves if using. Mix everything together well and transfer the mash to a serving bowl.
