Description

Jamie Oliver’s Swede and Carrot Mash is a simple, wholesome side dish made from boiled swedes and carrots that are mashed together with a bit of butter and seasoning. The result is a smooth and flavorful mash that’s perfect for complementing a wide range of main courses.

Ingredients

Scale

    • 500g swede (peeled and chopped)

    • 500g carrots (peeled and chopped)

    • 2 tablespoons unsalted butter

    • 1 teaspoon fresh thyme leaves (optional)

    • Salt and pepper to taste

    • A splash of milk or cream (optional, for creaminess)

Instructions

Step 1: Prepare the Vegetables

Peel and chop the swede and carrots into even-sized chunks. This ensures that they cook evenly and soften at the same rate.

Step 2: Boil the Vegetables

Place the chopped swede and carrots into a large pot and cover them with cold water. Add a pinch of salt, then bring the water to a boil. Reduce the heat and simmer for about 20-25 minutes, or until the vegetables are tender when pierced with a fork.

Step 3: Drain the Vegetables

Once the swede and carrots are cooked through, drain them well in a colander and return them to the pot. Let them steam dry for a minute to remove any excess water, which helps achieve a smoother mash.

Step 4: Mash the Vegetables

Add the unsalted butter to the pot with the drained vegetables. Use a potato masher to mash the swede and carrots until smooth. If you prefer a creamier consistency, add a splash of milk or cream and continue mashing until you reach your desired texture.

Step 5: Season and Garnish

Season the mash with salt and pepper to taste. For an extra burst of flavor, stir in the fresh thyme leaves if using. Mix everything together well and transfer the mash to a serving bowl.

Step 6: Serve

Serve the swede and carrot mash hot as a side dish to your favorite roast, grilled meats, or vegetarian mains. It’s a warm and hearty side that complements any meal.
