Description

Jamie Oliver’s steak marinade is a simple mixture of olive oil, garlic, herbs, citrus, and seasoning designed to enhance the flavour and texture of steak before cooking. It’s light, fresh, and ideal for short marinating times.


Ingredients

    • 4 tbsp extra virgin olive oil

    • 2 garlic cloves, finely minced

    • Zest and juice of 1 lemon

    • 1 tsp fresh rosemary, finely chopped

    • 1 tsp fresh thyme leaves

    • 1 tsp Dijon mustard

    • ½ tsp crushed black pepper

    • ½ tsp sea salt

    • Optional: ½ tsp chilli flakes


Instructions

Step 1: Combine the Base

In a bowl, whisk together olive oil, lemon zest, lemon juice, and Dijon mustard until fully blended.

Step 2: Add Aromatics

Stir in minced garlic, rosemary, thyme, black pepper, and salt. Mix well to evenly distribute flavors.

Step 3: Prepare the Steak

Pat the steak dry with kitchen paper. This helps the marinade cling properly and improves browning during cooking.

Step 4: Coat the Steak

Place the steak in a shallow dish or resealable bag. Pour the marinade over it and turn to coat evenly.

Step 5: Marinate

Let the steak marinate for at least 30 minutes at room temperature, or up to 4 hours in the refrigerator. Avoid marinating overnight, as too much citrus can affect texture.

Step 6: Remove Excess Before Cooking

Before cooking, gently shake off excess marinade to prevent burning in the pan or on the grill.
