Jamie Oliver’s Spinach and Mushroom Pasta is a simple yet flavorful dish featuring mushrooms, spinach, and pasta in a creamy garlic sauce. This vegetarian pasta is perfect for a quick and wholesome meal that satisfies both comfort and taste.
Ingredients
- 300g pasta (penne, fettuccine, or spaghetti)
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 200g mushrooms, sliced (button, cremini, or portobello)
- 150g fresh spinach leaves
- 1/2 cup heavy cream (or substitute with Greek yogurt for a lighter version)
- Salt and pepper to taste
- Freshly grated Parmesan cheese, for garnish
- Fresh parsley or basil, chopped (optional, for garnish)
Instructions
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain the pasta, reserving a cup of pasta water, and set aside.
In a large skillet or frying pan, heat the olive oil over medium heat. Add the chopped onion and cook for 2-3 minutes until softened. Add the garlic and cook for another minute until fragrant.
Add the sliced mushrooms to the pan, season with a pinch of salt, and cook for 5-6 minutes until they are golden brown and softened. Stir occasionally to ensure they cook evenly.
Add the fresh spinach leaves to the pan, stirring gently until they wilt down, about 1-2 minutes.
Pour in the heavy cream and season with salt and pepper to taste. Let the sauce simmer for 2-3 minutes until slightly thickened. If the sauce is too thick, add a little pasta water to reach your desired consistency.
Add the cooked pasta to the skillet and toss to coat evenly with the creamy spinach and mushroom sauce. If needed, add a bit more pasta water to loosen the sauce.
Serve the pasta warm, garnished with freshly grated Parmesan cheese and a sprinkle of fresh parsley or basil if desired.
