Ingredients

Scale

  • 1 kg (2.2 lbs) ripe plums, pitted and chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 100g (1/2 cup) brown sugar
  • 150ml (2/3 cup) apple cider vinegar
  • 1-inch piece fresh ginger, grated
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon salt
  • 1/2 teaspoon chili flakes (optional)
  • 50g (1/4 cup) raisins or sultanas

Instructions

Step 1: Cook the Aromatics

  • Heat a large saucepan over medium heat.
  • Add the chopped onion, garlic, and mustard seeds. Cook until soft and fragrant.

Step 2: Add the Plums and Spices

  • Stir in the chopped plums, grated ginger, cinnamon, cloves, chili flakes, and salt.
  • Cook for a few minutes until the plums start to soften.

Step 3: Simmer with Sugar and Vinegar

  • Pour in the apple cider vinegar and add the brown sugar.
  • Stir well and bring the mixture to a gentle simmer.

Step 4: Cook Until Thickened

  • Let the chutney simmer on low heat for 40-50 minutes, stirring occasionally.
  • The chutney is ready when it thickens and the plums break down into a jam-like consistency.

Step 5: Store in Jars

  • Allow the chutney to cool slightly before transferring it to sterilized jars.
  • Seal and store in the refrigerator.
