  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon chili powder (optional, for extra heat)
  • 1 can (400ml) coconut milk
  • 1 can (400g) diced tomatoes
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Fresh lime wedges (optional, for serving)

Instructions

Step 1: Prepare the Aromatics

In a skillet, heat a small amount of oil over medium heat. Add the chopped onion, garlic, and ginger, and sauté for 3-4 minutes until softened and fragrant. This step helps bring out the flavor of the spices and aromatics.

Step 2: Add the Spices

Stir in the curry powder, ground cumin, ground coriander, turmeric, and chili powder (if using). Cook for 1-2 minutes to toast the spices, which will intensify their flavor.

Step 3: Transfer to Slow Cooker

Transfer the sautéed onion mixture to the slow cooker. Add the chicken chunks, coconut milk, and diced tomatoes. Season with salt and pepper.

Step 4: Cook on Low

Cover the slow cooker with the lid and cook on low for 6-8 hours or on high for 4 hours, until the chicken is tender and the flavors have melded together.

Step 5: Adjust Seasoning

Before serving, taste the curry and adjust the salt and pepper if needed. If the sauce is too thick, you can add a little water to reach your desired consistency.

Step 6: Serve

Serve the curry hot, garnished with fresh cilantro and lime wedges if desired. Pair with rice, naan, or your favorite flatbread for a complete meal.
