Jamie Oliver’s Salmon Filo Pie is a savory pie featuring flaky filo pastry filled with tender salmon, creamy spinach, and aromatic herbs. This light yet filling dish makes a wonderful main course, especially when you’re looking for a unique and flavorful seafood option.
Ingredients
- 500g salmon fillets, skinless and boneless
- 250g fresh spinach
- 1 small leek, finely sliced
- 1 clove garlic, minced
- 200g crème fraîche or Greek yogurt
- Zest of 1 lemon
- Salt and pepper to taste
- 8–10 sheets of filo pastry
- 2 tablespoons olive oil or melted butter
- Fresh dill or parsley, chopped (optional, for garnish)
Instructions
Preheat your oven to 200°C (400°F).
In a large skillet, heat a small amount of olive oil over medium heat. Add the sliced leek and minced garlic, sautéing for 3-4 minutes until softened. Add the spinach and cook until wilted, then remove from heat. In a mixing bowl, combine the cooked spinach mixture, crème fraîche (or Greek yogurt), lemon zest, salt, and pepper. Flake the salmon fillets into bite-sized pieces and gently fold them into the mixture.
Brush a pie dish or baking dish with a bit of olive oil or melted butter. Lay a sheet of filo pastry in the dish, letting the edges hang over. Brush the sheet lightly with more oil or butter, then add another sheet. Continue layering the filo sheets, brushing each layer with oil or butter, until you have about 8-10 layers.
Spoon the salmon and spinach mixture into the filo-lined dish, spreading it evenly. Fold the overhanging edges of the filo over the filling. If desired, you can crinkle a few more sheets of filo on top for extra texture, brushing each with oil or butter.
Place the pie in the preheated oven and bake for 25-30 minutes, or until the filo pastry is golden brown and crispy.
Remove from the oven and let cool slightly. Garnish with fresh dill or parsley if desired. Serve warm.
