Jamie Oliver’s Rice Pudding is a classic dessert made with creamy, slow-cooked rice and milk, sweetened just enough for a deliciously smooth and satisfying treat. Traditionally served warm, rice pudding is also delicious cold and can be topped with a variety of flavors, from cinnamon to fresh fruits.
Ingredients
- 200g Arborio or pudding rice
- 1-liter whole milk (or a milk alternative for dairy-free)
- 100ml double cream (optional, for extra creaminess)
- 75g sugar (adjust to taste)
- 1 teaspoon vanilla extract
- A pinch of salt
- Freshly grated nutmeg or ground cinnamon (for garnish, optional)
Instructions
In a large, heavy-bottomed saucepan, add the rice, milk, double cream (if using), sugar, vanilla extract, and a pinch of salt. Stir to combine.
Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring frequently to prevent the rice from sticking to the bottom of the pan.
Once the mixture reaches a simmer, reduce the heat to low and cook for 35-40 minutes, stirring occasionally. Continue cooking until the rice is tender and the mixture has thickened to a creamy consistency. If the rice pudding becomes too thick, you can add a little more milk to reach your desired texture.
Taste the rice pudding and adjust the sweetness if needed by adding more sugar. If desired, sprinkle a bit of freshly grated nutmeg or cinnamon on top for added warmth.
Serve the rice pudding warm for a cozy treat, or allow it to cool and refrigerate for a chilled dessert. Garnish with your favorite toppings like fresh berries, honey, or a dollop of jam.
