Ingredients
For the Quesadillas
- 4 large flour tortillas
- 2 cups grated cheddar cheese
- 1 cooked chicken breast, shredded (optional)
- 1 red bell pepper, finely diced
- 1 small red onion, finely sliced
- 1 cup sweet corn
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- Salt, to taste
- Black pepper, to taste
For Serving
- Salsa
- Sour cream
- Guacamole
- Fresh coriander, chopped
Instructions
Heat olive oil in a frying pan over medium heat. Add the onion and bell pepper, then cook for 4–5 minutes until softened. Stir in the sweet corn, paprika, salt, and black pepper.
Mix the shredded chicken into the vegetable mixture and cook for another 2 minutes. Remove from the heat and allow the filling to cool slightly.
Lay the tortillas on a clean surface. Sprinkle cheese over one half of each tortilla. Add the filling mixture evenly, then top with more cheese.
Fold each tortilla over the filling to create a half-moon shape. Press gently to keep everything in place.
Place the folded tortillas in a dry frying pan over medium heat. Cook for 2–3 minutes per side until golden brown and crispy, and the cheese has melted completely.
Transfer the quesadillas to a cutting board and let them rest for 1 minute. Cut each one into wedges and serve with salsa, sour cream, or guacamole.
