Description

Jamie Oliver’s Puff Pastry Vegetable Tart is a vibrant and delicious dish that combines flaky puff pastry with roasted vegetables and flavorful cheese. This tart is perfect for a quick dinner, a light lunch, or as part of a party spread.


Ingredients

    • 1 sheet of ready-made puff pastry (about 250g)

    • 1 zucchini, thinly sliced

    • 1 red bell pepper, thinly sliced

    • 1 yellow bell pepper, thinly sliced

    • 1 red onion, thinly sliced

    • 100g (1 cup) cherry tomatoes, halved

    • 150g (1 1/2 cups) crumbled feta or grated mozzarella cheese

    • 1 teaspoon dried oregano or mixed Italian herbs

    • 1 tablespoon olive oil

    • Salt and freshly ground black pepper to taste

    • Optional: Fresh basil leaves for garnish


Instructions

Step 1: Preheat the Oven

    • Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.

Step 2: Prepare the Puff Pastry Base

    • Unroll the puff pastry and place it on the prepared baking tray. Using a sharp knife, score a 1-inch border around the edges without cutting all the way through. This will create a raised crust.

Step 3: Prepare the Vegetables

    • Toss the zucchini, bell peppers, onion, and cherry tomatoes in a bowl with olive oil, oregano, salt, and pepper.

Step 4: Add the Toppings

    • Within the scored border, layer the prepared vegetables evenly over the puff pastry. Sprinkle the crumbled feta or grated mozzarella on top.

Step 5: Bake the Tart

    • Place the tray in the preheated oven and bake for 20-25 minutes, or until the pastry is golden and puffed, and the vegetables are tender.

Step 6: Garnish and Serve

    • Remove from the oven and let cool slightly. Garnish with fresh basil leaves if desired. Slice and serve warm or at room temperature.
