Jamie Oliver’s Puff Pastry Tart is a versatile, quick, and delicious dish that can be customized with sweet or savory toppings. With a flaky puff pastry base and endless topping options, this tart is perfect for a light meal, snack, or dessert.

Ingredients

Scale

For the Base:

    • 1 sheet of ready-made puff pastry (about 250g)

    • 1 tablespoon olive oil or melted butter (for brushing)

For Savory Toppings:

    • 200g (1 cup) ricotta or cream cheese

    • 100g (1 cup) grated cheddar or parmesan

    • 1 zucchini or 1 cup cherry tomatoes, sliced

    • 1 teaspoon dried oregano or Italian herbs

    • Optional: Cooked bacon, mushrooms, or spinach

For Sweet Toppings:

    • 200g (1 cup) mascarpone or cream cheese

    • 2 tablespoons honey or sugar

    • 1 cup mixed berries, apple slices, or pear slices

    • Optional: A sprinkle of cinnamon or chopped nuts

Instructions

Step 1: Preheat the Oven

    • Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.

Step 2: Prepare the Puff Pastry Base

    • Unroll the puff pastry and place it on the prepared baking tray. Using a sharp knife, score a 1-inch border around the edges, being careful not to cut all the way through.

Step 3: Add Savory Toppings

    • For a savory tart, spread ricotta or cream cheese evenly within the scored border. Sprinkle grated cheese and layer with zucchini slices, cherry tomatoes, or your chosen toppings. Season with oregano, salt, and pepper.

Step 4: Add Sweet Toppings

    • For a sweet-tart, mix mascarpone or cream cheese with honey or sugar. Spread the mixture evenly on the pastry within the scored border. Top with mixed berries or sliced fruit. Optionally, sprinkle with cinnamon or nuts.

Step 5: Brush the Edges

    • Brush the scored edges of the pastry with olive oil or melted butter for a golden finish.

Step 6: Bake the Tart

    • Place the tray in the preheated oven and bake for 20-25 minutes, or until the pastry is golden and puffed, and the toppings are cooked or lightly caramelized.

Step 7: Serve

    • Let the tart cool slightly before slicing. Serve warm or at room temperature as a light meal, snack, or dessert.
