Instructions
Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper or lightly grease it with oil to prevent sticking.
Wash the potatoes thoroughly and pat them dry. Leave the skins on for extra flavor and texture, then cut each potato into even wedges by slicing them in half lengthwise, then cutting each half into 3-4 wedges.
Place the potato wedges in a large mixing bowl. Drizzle with olive oil, then sprinkle the paprika, garlic powder, rosemary (or thyme), salt, and pepper over the wedges. Toss well to coat each wedge evenly with the oil and seasonings.
Spread the seasoned potato wedges out in a single layer on the prepared baking sheet, ensuring they don’t overlap. This helps them cook evenly and get crispy.
Place the baking sheet in the preheated oven and bake for 30-35 minutes, or until the wedges are golden brown and crispy on the outside. Flip the wedges halfway through cooking to ensure they cook evenly.
Remove the wedges from the oven and let them cool for a minute. Garnish with chopped fresh parsley if desired, and serve warm with your favorite dips or sauces.
