Jamie Oliver Potato Salad with Mayonnaise is a classic potato salad made by tossing tender boiled potatoes in a creamy mayonnaise dressing with mustard, herbs, and seasonings. The result is a rich yet fresh side dish with a satisfying balance of creamy and tangy flavors.

For the Potato Salad

    • 1kg baby potatoes or waxy potatoes

    • 200g mayonnaise

    • 1 tablespoon Dijon mustard

    • 1 tablespoon lemon juice

    • 2 spring onions, finely sliced

    • 2 tablespoons fresh chives, chopped

    • 2 tablespoons fresh parsley, chopped

    • Salt, to taste

    • Freshly ground black pepper, to taste

Optional Garnishes

    • Paprika

    • Fresh dill

    • Chopped parsley

    • Sliced spring onions


Instructions

Step 1: Boil the Potatoes

Wash the potatoes thoroughly and place them in a large saucepan. Cover with cold salted water and bring to a boil. Cook for 15–20 minutes, or until fork-tender.

Step 2: Drain and Cool

Drain the potatoes and let them cool for about 10 minutes. Cut larger potatoes into bite-sized pieces while leaving smaller ones whole.

Step 3: Prepare the Dressing

In a large bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and black pepper until smooth.

Step 4: Add the Fresh Herbs

Stir the spring onions, chives, and parsley into the dressing until evenly combined.

Step 5: Combine Everything

Add the warm potatoes to the dressing and gently toss until every piece is coated without breaking the potatoes.

Step 6: Chill Before Serving

Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to blend.

Step 7: Garnish and Serve

Top with fresh herbs, a sprinkle of paprika, or sliced spring onions before serving.
