- 6–8 ripe plums, halved and pitted

- 100g (½ cup) caster sugar

- 50g (¼ cup) unsalted butter

- 1 tbsp lemon juice

- 1 tsp vanilla extract

- 1 sheet of ready-rolled puff pastry

- 1 egg (for egg wash)
Instructions
Step 1: Prepare the Caramelized Plums

- Preheat the oven to 200°C (400°F).

- In an ovenproof skillet, melt butter over medium heat.

- Add sugar and cook until golden and caramelized.

- Stir in lemon juice and vanilla extract.

- Arrange plum halves, cut-side down, in the caramel.
Step 2: Cover with Puff Pastry

- Roll out the puff pastry slightly and cut it into a circle slightly larger than the skillet.

- Place the pastry over the plums, tucking the edges inside the pan.

- Brush the pastry with beaten egg for a golden finish.
Step 3: Bake the Tarte Tatin

- Transfer the skillet to the oven and bake for 20-25 minutes until the pastry is golden brown.

- Let it cool for 5 minutes before flipping.
Step 4: Flip and Serve

- Place a large plate over the skillet and carefully invert the tart.
