Description

Jamie Oliver’s Plum Tarte Tatin is a delicious twist on the classic French dessert, featuring caramelized plums baked under a flaky puff pastry crust. This upside-down tart is rich, buttery, and bursting with sweet-tart plum flavors, making it a perfect dessert for any occasion.


Ingredients

    • 68 ripe plums, halved and pitted

    • 100g (½ cup) caster sugar

    • 50g (¼ cup) unsalted butter

    • 1 tbsp lemon juice

    • 1 tsp vanilla extract

    • 1 sheet of ready-rolled puff pastry

    • 1 egg (for egg wash)


Instructions

Step 1: Prepare the Caramelized Plums

    • Preheat the oven to 200°C (400°F).

    • In an ovenproof skillet, melt butter over medium heat.

    • Add sugar and cook until golden and caramelized.

    • Stir in lemon juice and vanilla extract.

    • Arrange plum halves, cut-side down, in the caramel.

Step 2: Cover with Puff Pastry

    • Roll out the puff pastry slightly and cut it into a circle slightly larger than the skillet.

    • Place the pastry over the plums, tucking the edges inside the pan.

    • Brush the pastry with beaten egg for a golden finish.

Step 3: Bake the Tarte Tatin

    • Transfer the skillet to the oven and bake for 20-25 minutes until the pastry is golden brown.

    • Let it cool for 5 minutes before flipping.

Step 4: Flip and Serve

    • Place a large plate over the skillet and carefully invert the tart.

    • Serve warm with ice cream, whipped cream, or custard.
