Description

Jamie Oliver’s Pineapple Cake is a simple yet indulgent dessert featuring crushed or diced pineapple mixed into a flavorful batter. It’s baked to perfection, resulting in a moist and fruity cake that’s great for any occasion.


Ingredients

    • 200g (7 oz) plain flour

    • 1 teaspoon baking powder

    • ½ teaspoon baking soda

    • 150g (5 oz) caster sugar

    • 2 large eggs

    • 120ml (½ cup) vegetable oil

    • 1 teaspoon vanilla extract

    • 200g (7 oz) crushed pineapple (with juice)

    • A pinch of salt

Optional Toppings

    • 100g (3.5 oz) cream cheese frosting

    • Fresh pineapple slices or chunks

    • A sprinkle of desiccated coconut


Instructions

Step 1: Prepare Your Equipment

    • Preheat the oven to 180°C (350°F) or 160°C (320°F) for fan ovens.

    • Grease and line a 20cm (8-inch) round cake tin with parchment paper.

Step 2: Mix the Dry Ingredients

    • In a large bowl, sift together the plain flour, baking powder, baking soda, and a pinch of salt.

    • Stir in the caster sugar to combine.

Step 3: Combine the Wet Ingredients

    • In another bowl, whisk the eggs, vegetable oil, and vanilla extract until smooth.

    • Add the crushed pineapple (including the juice) and mix well.

Step 4: Create the Batter

    • Gradually fold the wet mixture into the dry ingredients using a spatula.

    • Mix gently until just combined; avoid overmixing to maintain a tender texture

Step 5: Bake the Cake

    • Pour the batter into the prepared cake tin, smoothing the top with a spatula.

    • Bake in the preheated oven for 30-35 minutes, or until a skewer inserted into the center comes out clean.

    • Remove from the oven and allow the cake to cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.

Step 6: Add Optional Toppings

    • Spread cream cheese frosting evenly over the top of the cooled cake for added richness.

    • Garnish with fresh pineapple slices, chunks, or a sprinkle of desiccated coconut for a tropical finish.
