Description

Jamie Oliver’s Pea Pesto is a creamy pesto made with peas, Parmesan, garlic, fresh herbs, and olive oil. It has a light, sweet flavor and can be used in various dishes, adding a burst of color and taste.

  • 2 cups frozen peas, thawed
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup pine nuts (or almonds for a different flavor)
  • 1 clove garlic, crushed
  • 1/2 cup fresh basil leaves (or a mix of basil and mint)
  • 1/4 cup extra-virgin olive oil (more as needed)
  • Salt and pepper to taste
  • Zest and juice of 1/2 lemon (optional, for added freshness)

Instructions

Step 1: Prepare the Ingredients

If using frozen peas, allow them to thaw completely. Toast the pine nuts in a dry skillet over medium heat for 2-3 minutes until they are golden brown, enhancing their flavor.

Step 2: Blend the Ingredients

In a food processor, combine the thawed peas, grated Parmesan cheese, toasted pine nuts, crushed garlic, and fresh basil leaves. Blend until you have a coarse paste.

Step 3: Add Olive Oil

With the food processor running, slowly drizzle in the olive oil. Continue blending until the pesto reaches your desired consistency. You may need to add a little extra olive oil to make it smoother.

Step 4: Season and Adjust

Season the pesto with salt and pepper to taste. For extra brightness, add the lemon zest and juice, blending again briefly.

Step 5: Serve or Store

Transfer the pea pesto to a bowl and use immediately as a pasta sauce, spread, or dip. If not using right away, store it in an airtight container in the refrigerator for up to 3 days.
