Jamie Oliver’s Pavlova is a classic meringue-based dessert with a crisp outer shell and soft, marshmallowy inside, topped with whipped cream and fresh fruit.

For the Meringue Base:

- 4 large egg whites

- 200g (1 cup) caster sugar

- 1 teaspoon white vinegar or lemon juice

For the Topping:

- 300ml (1 1/4 cups) double cream

- 2 tablespoons icing sugar

- 1 teaspoon vanilla extract

- Fresh fruit (e.g., berries, kiwi, mango, or passion fruit)
Instructions
Step 1: Preheat the Oven

- Preheat your oven to 150°C (300°F). Line a baking tray with parchment paper and draw a 20cm (8-inch) circle as a guide.
Step 2: Make the Meringue

- In a clean, dry bowl, whisk the egg whites with an electric mixer until stiff peaks form.

- Gradually add the caster sugar, one tablespoon at a time, whisking continuously until the mixture is glossy and thick.

- Gently fold in the vinegar and cornflour to stabilize the meringue.
Step 3: Shape the Meringue

- Spoon the meringue mixture onto the parchment paper, spreading it within the drawn circle. Shape it into a dome, leaving a slight dip in the center for the toppings.
Step 4: Bake the Meringue

- Place the tray in the oven and immediately reduce the temperature to 120°C (250°F). Bake for 1 hour, then turn off the oven and leave the meringue inside to cool completely.
Step 5: Prepare the Whipped Cream

- In a mixing bowl, whip the double cream with icing sugar and vanilla extract until soft peaks form.
Step 6: Assemble the Pavlova

- Carefully transfer the cooled meringue to a serving plate. Spread the whipped cream over the top and decorate with fresh fruit.
Step 7: Serve

- Slice and serve your Pavlova immediately for the best texture and flavor.
