Description
It’s a basic preparation of rhubarb roasted in the oven with sugar, orange zest, and optional flavorings, resulting in a soft, syrupy, and slightly tangy compote-like dish that’s ready to serve in countless ways.

- 500g fresh rhubarb (trimmed and cut into 5cm lengths)

- 100g caster sugar (adjust to taste)

- Zest and juice of 1 orange

- ½ tsp vanilla extract (optional)

- 1–2 tbsp water (if needed for extra syrup)
Instructions
Set your oven to 180°C (350°F). Choose a shallow baking dish or tray to allow even roasting.
Rinse and trim the rhubarb, cutting into uniform lengths. Lay the pieces in a single layer in the baking dish.
Sprinkle over the caster sugar evenly. Drizzle with orange juice and scatter the zest on top. Add vanilla extract if using.
Place the dish in the oven and roast for 20–25 minutes, or until the rhubarb is tender but still holding its shape.
Remove from oven and let it cool slightly. The syrup will thicken as it sits. Serve warm or chilled.
