Description

Jamie Oliver’s Microwave Chilli Con Carne is a simplified version of the traditional dish, cooked entirely in a microwave. It features ground beef, beans, tomatoes, and a medley of spices for a hearty and satisfying meal.


Ingredients

    • 1 tablespoon olive oil

    • 1 onion, finely chopped

    • 2 garlic cloves, minced

    • 1 red chili, finely chopped (optional)

    • 1 teaspoon ground cumin

    • 1 teaspoon smoked paprika

    • 1/2 teaspoon chili powder (adjust to taste)

    • 250g (1/2 lb) ground beef or turkey

    • 1 can (400g) diced tomatoes

    • 1 can (400g) kidney beans, drained and rinsed

    • 1 teaspoon tomato paste

    • Salt and freshly ground black pepper to taste

    • Fresh coriander, chopped, for garnish

Optional Toppings:

    • Sour cream or Greek yogurt

    • Grated cheddar cheese

    • Sliced avocado

    • Lime wedges


Instructions

Step 1: Prep the Ingredients

    • Chop the onion, garlic, and chili. Drain and rinse the kidney beans.

Step 2: Sauté the Aromatics

    • In a microwave-safe bowl, combine olive oil, onion, garlic, and chili. Microwave on high for 2-3 minutes, stirring halfway through, until softened.

Step 3: Cook the Ground Beef

    • Add the ground beef to the bowl and microwave on high for 5 minutes, stirring every 2 minutes to break up the meat. Cook until browned and no longer pink.

Step 4: Add the Spices and Tomatoes

    • Stir in cumin, smoked paprika, chili powder, and tomato paste. Add the diced tomatoes and kidney beans. Mix well to combine.

Step 5: Cook the Chilli

    • Cover the bowl with a microwave-safe lid or plate, leaving a small vent. Microwave on high for 8-10 minutes, stirring every 3 minutes, until the flavors are well combined and the mixture is heated through.

Step 6: Season and Garnish

    • Season with salt and black pepper to taste. Garnish with fresh coriander and your favorite toppings.

Step 7: Serve

    • Serve hot with rice, tortilla chips, or a side of crusty bread.
