Ingredients
For the Salad
-
- 2 large heads of lettuce (romaine, butter lettuce, or mixed leaves)
-
- 1 small cucumber, thinly sliced
-
- 1 small red onion, finely sliced
-
- 1 handful fresh parsley or basil, chopped
-
- ½ cup cherry tomatoes, halved (optional)
For the Dressing
-
- 3 tablespoons extra virgin olive oil
-
- 1 tablespoon white wine vinegar or lemon juice
-
- 1 teaspoon Dijon mustard
-
- 1 teaspoon honey
-
- Salt, to taste
-
- Black pepper, to taste
Instructions
Separate the lettuce leaves and rinse them under cold running water. Remove any dirt or damaged leaves. Pat dry using a clean kitchen towel or salad spinner.
Slice the cucumber into thin rounds, finely slice the red onion, and halve the cherry tomatoes if using. Chop the fresh herbs and set everything aside.
Instead of cutting the lettuce with a knife, gently tear the leaves into bite-sized pieces. This helps preserve their natural texture and appearance.
In a small bowl, whisk together the olive oil, vinegar or lemon juice, Dijon mustard, honey, salt, and black pepper until smooth and well combined.
Place the lettuce, cucumber, onion, tomatoes, and herbs in a large salad bowl. Toss lightly to distribute the ingredients evenly.
Pour the dressing over the salad just before serving. Toss gently until every leaf is lightly coated. Serve immediately for maximum freshness and crunch.
